I Like Carrot Cake?
Apparently so. I've never like it before, but I was determined to find a use for the huge bag of carrots in the fridge that were on the verge. I liked the fact that this was Carrots and Nothing Else Cake because I'm so picky about all of the extra crap that people throw into their desserts--raisins (meh, ok), nuts (ugh) and the ultimate disgrace: coconut (blech!). And the recipe had great reviews on VegWeb. So, I decided to give it a try, and I'm glad that I did. I liked it...a lot. Maybe too much as it's already half eaten. I even bothered to ice it, which I never do. This cake also carries the Mason stamp of "Fucking Delicious" approval.
Notes:
-We had no applesauce, so I had to make the full fat version. Next time, I'll definitely use the applesauce to minimize the guilt factor. I don't think that it will make it any less tasty.
-I used whole wheat pasty flour and could not tell the difference at all. So, that makes it healthy, eh? Even with a whole cup of oil, right?
-My grater is total garbage. I never knew since I rarely use it. It took me almost an entire episode of Law & Order: CI to shred all 3 cups of carrot.

holy smoly, that looks good. i've been wanting carrot cake for a while now, but hate the thought of grating. ouch.
this cake is sooooooooo good! now I want to make some for later today. orange works well for Halloween, yes? ;)
It is good! I couldn't believe how much I liked it. And I think that if you wanted to throw in a ton of stuff, you could without screwing it up. For Christmas, I think I'm going to make one side loaded up with stuff and one side plain.
The grating is a huge pain, though. Maybe I should look into one of those shredding discs for the food processor...
