Vegan Truffles
I've been too busy with last minute shopping to make much other than salad this week, but I did manage to start this truffle recipe from The Vegan Chef last night. They couldn't be any easier to make. I had to leave mine in the fridge overnight (instead of an hour) to set up enough for rolling out, but that may just be because our fridge is so full right now. This morning, I pulled them out and rolled them in some plain cocoa. So, we now have vegan candy to eat while the rest of the family is having non-vegan sweets. These are pretty plain, but I think that this recipe will be a great base for all kinds of truffles. I can't wait for an excuse to spend a day testing out tons of variations.
