Edamame Spread
This is a really simple edamame spread that I adapted (erh, tried to remember) from a recipe that I found online last year sometime. We smeared it on flat bread today, but you can use it as a sub for hummus in/on pretty much anything.
Fresh Edamame Spread
2 c. shelled edamame, boiled
1 T. tahini
3 T. olive oil
2 cloves of garlic
juice of 2 lemons
salt and pepper
Toss it all in the vita-mix or a food processor until smooth.
Or mince the garlic, smash the edamame and stir up with the rest of the ingredients.
