We Had A Vegan Cookout

soy brats and eggplant

It was so nice this morning that we decided to go buy a grill so that we could cook out tonight. After a day of thrift stores, we grilled Yves Brats, Tofurkey Beer Brats and some thick slices of eggplant. Grilled eggplant is incredibly easy and will probably be eaten around here on a really regular basis for the next 6 months or so.

Where are earth are you located where you can have the luxury in February of having an outdoor BBQ! My barbeque is buried under 2 feet of snow.
I'm freezing my buns off in sub zero temperatures...It will be another 3 months before folks around here are able to light up the barbeque.

oops - never mind, I just figured it out...you're in Texas.

It was a great weekend here in Texas for a bbq (where in tx are you?)

Don't think I've ever grilled eggplant, but I bet it was awesome! Did you like the tofurky beer brats?

Yeah, living in Dallas makes you complain about "the cold" if it's under 50F! It's been really nice all week.

I love the tofurkey beer brats! I used to like the Yves the most, but now I think that the Tofurkeys are the best. You should definitely try grilling eggplant. It's probably the easiest way to cook it ever and once the grill is hot, it only takes about 10 minutes.
