Chewy Vegan Oatmeal Cookies
I've been looking for a simple, chewy vegan oatmeal cookie for a while now with no luck. A lot of vegan oatmeal cookies tend toward the drier, "healthy" tasting variety of which I am not much of a fan. Today, by combining elements of several non-vegan recipes and subbing vegan ingredients, I finally found the (almost) perfect replacement for my old favorite chewy oatmeal cookies. The chocolate chips turned out to be completely unnecessary in this recipe, so feel free to ditch them.
Vegan Oatmeal Cookies
1 c. Earth Balance
1 c. brown sugar, packed
1/2 c. white sugar
2 Ener-G "eggs"
2 t. vanilla
1 and 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
3 c. oats
1/2 c. chocolate chips (optional)
Preheat oven to 325F.
Cream Earth Balance and sugars. Whip Ener-G "eggs" until foamy and whip into creamed mixture with vanilla. Sift flour, baking soda and salt into bowl and mix until combined (try not to overmix). Stir in oats one cup at a time. Add chocolate chips, if desired.
Bake on parchment for 12 minutes. They may not look completely done, but be sure not to overcook or they will harden. I baked mine in fairly large mounds (maybe 2 T. each) to keep them soft and chewy.
