Blueberry Poothie
This is my favorite smoothie at the moment. By the end of the week, we've usually gone through almost all of our fresh blueberries, but there are always some that begin to go a little off by mid-week. We keep them in a bowl in the fridge and use them for baking or smoothies. They usually get added to peaches or bananas a 1/4 cup at a time, but this is my new favorite way to use them up. Mason has taken to calling this a poothie, due to the bran and flax. It is extremely filling and full of fiber. Even with the Vita-Mix, it can be a little bit...toothsome (okay, chunky). If that grosses you out, you should probably just skip it.
Blueberry Poothie
1 T. bran
1 T. flax meal (I like golden flax)
3/4 c. blueberries
1 c. soy milk
1/2 tsp. spirulina
1 tsp. agave nectar
Pulse bran and flax in Vita-Mix until fairly fine. Add remaining ingredients and a handful or two of ice. Blend until smooth.
This makes a lot of smoothie! It's best to drink it all at once, or blend it again if you save some for later so that isn't too thick and pulpy. It has over 100% of your daily Vitamin A, E and B-12 and 30% of your Vitamin C, calcium and iron--and 8 grams of fiber.
