Vegan Mock Tuna Mushroom Casserole

I refuse to post the photos of this dish because no one will make it if they see how unappetizing mine looked. It's so good and I don't want my poorly lit, sub-par photo to tarnish it's reputation. So, anyone who loved tuna casserole (or other creamy noodle-y casseroles) as a non-vegan should definitely try it. I doubled the chips and omitted the fried onions.
