Happy Birthday, Mas!
Today is Mason's 26th birthday--the perfect excuse to try out a recipe from my new copy of Vegan Cupcakes Take Over The World. I made the cookies & cream variation of the basic chocolate cupcake (using 365 oreo knock-offs). They are seriously terrible for you, but I definitely think that they would pass the non-vegan test.
I also made the Mini Crustless Tofu Quiches from Fatfree Vegan, subbing Gimme Lean for the mushrooms to make it more breakfast-y. Mine were much sloppier than Susan's, but they were still really tasty. Mason wants some on biscuits; I think that they would be great on English muffins. Either way, we'll definitely be having them again.
