Roasted Cabbage and Tofu Nuggets

Roasted cabbage is delicious. We are huge cabbage fans, so I'm not sure why we hadn't tried roasting it sooner. Just chunk a head up into wedges, toss it into a baking dish (I line mine with parchment), drizzle with about 2 tablespoons of oil and roast for 45-60 minutes at 400F. It really is so good. If you like cabbage in the slightest, try it. The tofu nuggets are from Please Don't Feed the Bears. It's just a baked tofu breaded with equal parts flour/nutritional yeast/cornmeal and seasoned to taste with salt, paprika and garlic powder.
