Vegan Nachos

We made some pretty sweet nachos today. Mas dropped by Fiesta and bought some of our favorite tortilla chips on his way home from work. We whipped up this nacho sauce (based on this one from VegWeb) and cut up tomatoes, onions, olives, jalapenos and limes for toppings.

Vegan Nacho Sauce
1/2 block firm silken tofu
1 c. nutritional yeast
1/2 c. vegan mayo
2 tsp. cornstarch
2 T. tahini
1 T. yellow mustard
1/2 T. sriracha
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. paprika
1/2 tsp. turmeric
1/2 tsp. black pepper
pinch of salt
1 c. unsweetened soy milk
1/2 package El Burrito Soyrizo

Add first 14 ingredients to Vita-Mix and blend well. Add soyrizo and pulse until combined. You can heat the sauce on the stove or in the microwave, stirring regularly. This makes enough sauce for 4 platters of the size above, so you may want to half the recipe. Eat these while drinking cold Mexican Cokes.

Edit: I just realized that I made it sound like I did my share of the work in making these--which is so not true. I feel like crap today, so Mas did almost everything by himself. Thanks, Mas!

oh yum...nachos are fantastic and yours look so good! I should try making the faux nacho cheese sauce one day.
I also make a nachos platter with spicy black beans, sour supreme "non-dairy sour cream", guacamole, blue nacho chips, etc...if you want to see a tantalizing photo...go to my blog and look at the right side bar towards the bottom of the page where there are some images of food from my flickr page.
