Mason's Guacamole

Mason doesn't cook all that often, but he has his specialties and they are all delicious. He's the designated pancake, sandwich and pizza maker--and anything grilled is his responsibility. He also makes the best salsa and guacamole ever! There have been some really good avocados at Fiesta this week, so we've taken advantage of them by having guac and chips with salsa for dinner twice so far (and we still have a huge bowl in the fridge for tonight).

Mason's Guac
6 medium Haas avocados
1 large or 3 small tomatillos
1 medium white onion
2 serrano peppers
10 mild seeded jalapenos
juice of 5 limes
salt and pepper to taste

Dice tomatillos, onions and peppers. Scoop flesh of all six avocados into a large bowl. Add lemon juice and salt. Mash with a potato masher until creamy. Add diced veg and mix well. Pepper to taste.

This makes a lot of guac! It would probably serve 8-10 people, but it will keep in the fridge for up to 2 days in an airtight container. I'm going to try freezing some to eat later--I'll let you know how it works.

Yum, love avocados - love guacamole - unfortunately they are very pricey in my city so I tend to buy them when they are on sale which is a rarity. Occasionally, I just have too big of a craving and give over the $1.25 for ONE avocado. Can't make much guac on one avocado. BTW - My hubbie is also the pancake maker in the household :D

I guess we're lucky to be this close to Mexico--the avocados have been amazing this year.
