Spicy Cabbage Wraps
Just to prove that I've actually been making food, here is one of last night's cabbage wraps. They were nothing fancy--just Savoy cabbage leaves filled with quinoa that Mas had stir-fried with jalapenos and onions and chickpea cutlet strips that I had baked and tossed in a spicy sauce, all topped with leftover guacamole and green onions. The chickpea cutlets from Veganomicon are by far my favorite recipe of '07. They are extremely versatile and always tasty. They are amazingly good pan fried, but I usually bake them and then marinate them in a sauce (marinara, hot sauce, vegan ranch) so that I don't have to use so much oil. They are great alone, topped with gravy, on sandwiches, in wraps--pretty much anywhere. And I love how unbelievably easy they are to make. I know that every vegan on Earth has posted about them (including me), but they really are that great. I have to admit that I haven't made all that many recipes from Veganomicon yet--and I've had a few flops, but the book was worth the money for this recipe alone.

Yes - those cutlets have been popping up on many vegan blogs as of late and I am determined to give them a whirl. I love the way you have wrapped the whole thing in a lettuce leaf instead of a bun - that is a great idea!
oops - sorry - my mistake I meant to say cabbage leaf!
