Seedy Tofu Oat Burgers

I know, I know, they look like oatmeal cookies.

I haven't been posting much because we've been eating pretty much the same thing every day--quinoa and various amazing local fruits and veggies. But, I actually made something new today. I don't have a name for them other than what they are, so seedy tofu oat burger patties it is. This recipe (loosely based on the quality tofu burgers from VegWeb) makes 8-9 very filling patties. I baked four and saved the rest of the mixture for later, so I let you know how it holds up when I make the next batch. We ate ours with Miso Mayo and fresh tomatoes and onions from the farmer's market.

Seedy Tofu Oat Burgers
14 oz. block of extra firm tofu, drained
1.5 c. oats
1/2 c. sunflower seeds
1/4 c. pumpkin seeds
4 T onion, minced
2 T water
4 T soy sauce
1 T sriracha
1 tsp paprika
1 tsp garlic powder
dash of pepper

Preheat oven to 400F. Mash tofu with water, soy sauce, sriracha, onion and spices. Grind seeds in blender or food processor and stir into tofu. Add oats and combine well. Shape into patties and place gently on a cookie sheet lined with parchment. Bake for 20 minutes, turn and bake for another 8-10 minutes.

Those sound really yummy. How do they hold up in a sandwich? All the homemade veggie burgers I've made always crumble or get squished or otherwise fall apart when you put it inside a bun and try to bite down. I want to know what all the frozen veggie burger people do to make theirs actually hold together.
