Vegan Snickerdoodles

See, as soon as I stop promising to cook, I have things to post. Last night, I baked a batch of peanut butter cookies to send to my dad, since we can't be there for his birthday. It didn't seem like enough to warrant the shipping, so I decided to try out this snickerdoodle recipe that Celine posted a few months ago. They turned out pretty well, though I made them quite a bit bigger than the recipe calls for and they probably could have benefited from a few more minutes in the oven. I know it's not very snickerdoodle-y, but I think that I might spice the dough a bit next time or maybe add a little almond extract.
