Onion Focaccia and Easy Tomato Sauce



We had a late lunch of pasta and cabbage, so I wanted to make a simple, snacky dinner for us to eat while watching Flatliners tonight. The focaccia is a Jamie Oliver recipe from The Naked Chef. I softened some onions in Earth Balance for the topping. The sauce is my favorite super simple tomato sauce that can be used as a base for all kinds of dishes. It's really so basic that I shouldn't even bother to type it out, but here it is.

Easy Tomato Sauce

2 T olive oil
4 garlic cloves
2 tsp dried oregano
1/2 tsp crushed red pepper
1/2 tsp dried basil
42 oz diced tomatoes
2 T tomato paste
1 tsp salt
1 T balsamic vinegar
black pepper to taste

Sautee garlic in olive oil for 3-4 minutes over med-low heat. Add spices and fry for 1-2 min. Add tomatoes and paste. Simmer for at least 1 hour. Add balsamic vinegar, salt and 6-10 grinds of black pepper. Simmer for another 5 minutes or so.

The end. I told you it was basic.
