Vegan Pigs in a Blanket

vegan pigs in a blanket

Hey, remember this dough? We didn't either, until we were scavenging for something to eat for dinner on Monday. Wrapping it around Yves hot dogs made for the perfect vegan pigs in a blanket. They were flaky and delicious dipped in yellow mustard. I also made this little jelly pastry with the leftover dough--which froze and thawed even more beautifully than I had hoped. We'll definitely be making this dough again and again and again.

p.s. - have you tried making the crackers from NFVC?! i saw them in there the other day and thought "hmmm, these look tasty! i wonder if anyone's made 'em yet?!"

No, I haven't tried them yet, but I was just looking at that recipe yesterday! I'm still trying to get past my cracker-making phobia. It just seems like it would be too hard for some reason. I really want to be able to make my own, though!

As soon as I saw those piggies in a blanket, I had a flashback to my childhood. I'd love to make these one day and devour the whole batch but using vegan hotdogs, of course :)
