Vegan Supreme Pizza

I was at a loss for what to make for dinner last night, so I called Mason as he was leaving work and he said he would take care of it. I knew that he was making a pizza, but I had no idea that it would be the ultimate vegan pizza--a crispy crust topped with red sauce, red peppers, green peppers, black olives, green olives, roasted onions, roasted eggplant, marinated artichokes, shredded zucchini, tempeh bacon and grilled tofu! Seriously, I can't even put into words how good it was. It's now known as Mason's Vegan Supreme and it was topped off with another delicious new recipe from Mas, a pumpkin pie smoothie! I'll get the recipe from him and post it ASAP.

I was thinking to make a pizza for tomorrow evening while watching my spooky movie. I am so inspired by this recipe for vegan pizza. I have a block of firm tofu in the fridge and plenty of Greek olives so that's a good start. I've never heard of tempeh bacon before although I do have a bloc of tempeh in the freezer. Anyway, I'll probably have to make do with what I have on hand but I'm really eager to make a similar pizza now!!

Just use whatever you have in the fridge that you think will taste good together--if it tastes good not on a pizza, it generally tastes good on a pizza. Whatever you decided to use, just be sure to use a ton of it! That's what makes a pizza really awesome! We like to lightly roast, grill or sautee and season the toppings before we bake the pizza.

I have to let you know that I made a delicious pizza last night based on your suggestions about grilling/roasting the veggies (onions, mushrooms, peppers, broccoli)and hickory smoked tofu first. It made a world of difference! There was one slice left for today's lunch and my husband and I became very possessive over who would get the last slice. Being the nice person that I am, I shared MY pizza with him :D Thanks a bunch!

Wow. The pizza looks delicious. And cast iron is awesome. You can even make a Chicago style pizza using one.
